there's a new nut in town


several months ago i discovered that my body doesn't tolerate wheat very well (i'm okay with gluten, just not the wheat), and i must admit that i was pretty bummed out at first........okay, it was an all-out pity party.......but then again, what's a party without all of my favorite party fare like cinnamon rolls, an assortment of gooey, crusty panini, and cookies, cookies, cookies?!  so i've been on the hunt for decent tasting treats,  and while i found some wheat-free delights at the grocery store, i'm not crazy with how overly sweet all of the rice-flour-gluten-free products taste (can't believe i just said that).   i've been reading a lot of great things about almond flour, so i ordered some......and if proof is in the bag alone, i'm definitely on to something......this is pure almond happiness!!



and combined with this cookbook, i should be back in pastry paradise in no time (i'm thinking that chocolate cake with the mile-high frosting will be a great place to start, don't you?!)!

(How did you discover this problem with wheat? I wish I knew why my stomach feels so badly much of the time...?) Hope your yummy almond flour makes you feel Almond Joy again, lori. ♥ Hugs to you. Kath

that sounds soooo wonderful. i am in the process of figuring out if my own body doesn.t like wheat either...how did you decide?

can you still eat a handful of almonds? is almond flour lighter & finer ground than regular flour? curious! I think I'll check it out at New Frontiers!! (like a Whole Foods). perhaps you will share one of your "fav" new recipes in the next few months??

I'm allergic to wheat and have become a dab hand at adapting recipes to be wheat-free. I baked a rather delicious chocolate and cherry cake yesterday...

Did you know oatmeal can be ground to a powder and used in baking? I wonder how that would work for you?

How about you eat the cake and give me the frosting. I often buy small frosted cupcakes at the grocery store just so I can have the frosting. I look forward to your experiments with the almond flour and cookbook.

oh yes, I cannot agree with you more about this fluffy white icing cake ....do let us know how good it tastes....I think even Bucky would want some!

Hi Lori!... I know I'm not celiac, but I definitely have some unresolved digestion issues. Anything really healthy, like bread make with that first wonderful-for-you ingredient "whole wheat flour" gives me an almost instant tummy ache...it just takes about 15 minutes. Weird you posted this I have Celiac's and can't eat wheat, rye or barley. I can't believe how much better Ive felt the last six months. It's really like night and day.

The white ,fluffy frosting on that divine cake looks like my frontyard:)snowy wonderland everywhere here in the NC mountains!
Almond flour is a wonderful
alternative,also try *SPELT*
flour,loaded with fiber,protein
and a delicious *Nutty* flavour!
